This booklet describes an elegant luncheon of chicken croquettes, Saratoga potatoes, assorted breads, and devil’s food cake with coffee. This luncheon isn’t being thrown solely for fun, but to honor EKU’s Founders Day. This is a day to commemorate EKU’s founding day, March 21, 1906. It also celebrates the men and women who played a part in founding EKU and contributing to its success. This campus holiday is still observed today, and reminds us of how far EKU has come.
